ITALIAN EXTRA VIRGIN OLIVE OIL

100% Italian Extra Virgin Olive Oil of Top quality produced exclusively from olives grown and harvested exclusively in the lands of the Calabria region.


CULTIVATION USED TO OBTAIN THE ORGANIC EXTRA VIRGIN OIL:
Dolce di Rossano mainly (about 80%); the remaining 20% ​​is represented by other varieties such as Nocellara Messinese, Leccino, Nocellara del Belice, Carolea and others.
The color is yellow with green reflections; the perfume opens harmoniously to the nose with an elegant charge of green leaf; the taste is sweet with a bitter and spicy finish.

MANUFACTURING TECHNIQUE


COLLECTION AND TRANSPORT:

This step is directly handled by our 220 members. It is done both manually and mechanically, by using nets, to prevent the olives from touching the soil. After the collection, olives are immediately carried to our establishment where they are weighed and, temporarily, stored in bins.


GRINDING PERIODS:

Immediately after harvest, the olives are placed in well-ventilated boxes, in order to avoid the onset of mold, and sent to the mill; in fact, within 18 hours after harvesting, the pressing is completed, thus ensuring the preservation of the best organoleptic properties of the oil.


WASHING AND SEPARATION:

A few hours after the collection, olives are ready for the manufacturing process. It begins with the defoliation, that allows leaves and branches to be removed, and it is followed by the washing process, in order to clean olives from any other impurity.



PRESSING:

Olives are ground according to the tradition, using a millstone made in granite. The olive paste so obtained releases a smell that is typical of just pressed olives.



CENTRIFUGATION AND FILTERING: 

In the last part of the manufacturing process, oil and water are divided by using a centrifuge. The so obtained oil undergoes a first filtering in order to remove the impurities and get ready to be stored in stainless-steel silos



DECANTATION PERIOD:

The oil obtained is not filtered but undergoes a slow process of natural decantation (about 2 months), and a possible glaze of the oil testifies to the genuineness of the product, preserving absolutely unmistakable tastes and sensations typical of the fruit.

With two offices, one in New York managed by Girolamo Rosi who deals with sales on the American market and one in Vibo Valentia, a small town in the center of Calabria managed by Salvatore Romano who deals with the European market, which they follow with great care and devotion, all the various processes from the olive harvest to the final sale. Our extra virgin olive oil is produced exclusively from olives grown and harvested in Calabria, from organic plantations, keeping the plants under strict control all year round. Subsequently they are ground and processed 18 hours from the time they are harvested, keeping the organoleptic properties of the final product unaltered. From 1990 our company made and marketing extra virgin olive oil guaranteed by our plantations.


We have the capacity of an average of 120000 quintals of olives. We use a type of cold extraction over continuous period ,
extractions occur in two phases that give the oil a unique flavor and aroma that only a genuine product can give. Its rich
properties antioxidants and aromas that make the perfect oil and adequate in all dishes of the Mediterranean diet.
